The legend:
We called Modezia by Paolo Scimone the first product of Baristo Specialy Coffee Selection line. According to a legend, a long time ago, in VI century, queen Teodolina had a nap near to the Lambro River, while her husband was hunting. In her dream she saw a pigeon which brought a message to dedicate the place to her God – Modo. Teodolina answered with “Etiam” (meaning “I agree to God’s will”). The combination of these 2 words (Modo and Etiam) gave the name of the city – Modezia (Modœtia) in Latin, or how we call it nowadays Monza. This is the town where Paolo Scimone was born.
The blend
The selection is creation of the Italian coffee master and barista teacher Paolo Scimone. The blend used for our limited edition Baristo coffee consists of high quality Arabica varieties from Brazil, India and Ethiopia which Paolo selects and buys personally on specialized coffee auctions.There’s a rule that before starting an auction for each specific variety, the buyers are checking the quality of the coffee by degustation of green coffee, the process is called “cupping”.
The technology
To show its individuality and aroma all coffee varieties are roasted separately after precise check of the optimal temperature. Paolo mixes all three types of Arabica in proportions which create unique, memorable flavors.
The character
The result is well balanced selection with tick body and captivating taste. The rich aroma with fresh cacao notes and red berries pass along to memorable aftertaste of nuts and dark chocolate.
