The legend
This single origin Arabica is named under its birth land – the Juncalito mountain, located along the northern shores of the Caribbean Sea in the Dominican Republic. Unique area with altitudes varying between 900 and 1900 meters where some of the highest quality coffee beans grow. Due to being near to the north part of the Atlantic Ocean, the period of harvesting runs from August to February next year. The intensive sunshine combined with all year long, regular rainfall, allows for 4-5 times blooming. Coffee growers and pickers return 5 to 6 times, on average, to the same tree.
The blend
Baristo Specialty Coffee Selection – Juncalito Mountains by Paolo Scimone is single origin Arabica grown precisely in this remote part of the world. As a rule, before the bidding for a particular variety starts, buyers check the quality of the raw material by carrying out specific tastings of the green coffee, called ‘cupping’. This is how Paolo Shimone picks the coffee that will become the Baristo Specialty Coffee Selection.
THE TECHNOLOGY
The coffee beans in Baristo Specialty Juncalito Mountains have undergone wet processing, combined with a medium level of roasting.
The character
As a result of the roasting technology applied, we enjoy a combination of soft, sweet character and delicate acidity. This prepares the palate for the final touch of toffee caramel and hazelnut.
